I have about five minutes to spare, so this is going to be snappy! For lunch today, I had what I made last night around dinner time: Chicken, Carrot and Cucumber Salad.
I DO recommend this salad. I DO NOT recommend making it the day before – the mayonaise liqui-fied over night. Eek!
Anyway, here are the ingredients for this beast. A very simple salad, I promise you!

If you’ve checked out my twitter or facebook page, then you might have noticed that (along with Hangry Pants and Heather Bakes) I am interviewing Stephanie Izard – winner of Top Chef, Season 4. I had intended on keeping this a secret, but since HP and HB announced it on their blogs – I couldn’t help but join in the fun :)
I have conferenced with HP about this, and we are making sure to not overlap questions. BUT, if you do have any last minute items you’re dying to ask, feel free to post them here! I will do my best to ask Stephanie today.

My news: I'm getting a haircut!! I have short hair and it becomes mullet-ish when it grows (which is fast), so this makes haircuts fabulous! And I just like them.

Too bad the salad went watery the day after. I would imagine it was the cucumbers - maybe if you only mix them in when you go to eat it, it would stay thicker?
