Chicken-Orzo Salad

I love this recipe, and I loved this lunch – even though I didn’t have goat cheese on hand (like the recipe called for) to sprinkle on top.

I even used fake chicken, and although the first few bites were weird – I ended up sort of liking it (though I don’t think I’ll buy it again.)

I should also note that the recipe calls for some tomatoes (ugh) and random peppers (double ugh) so I just subbed with chickpeas (yay!).

  1. Hi there!! I never cease to be impressed by the amazing cooking job that you do!!! That lunch looks great...i LOOOVE orzo but I have no idea how to "manage" it. You should be SOO SOO SOO proud of yourself for always dishing up delightful recipes and making it into reality. I wish I had that in me!! You're such a great role model. :)

  8. Thanks for the roommate sympathy, they are definitely trying!
    I actually got that cup with my Magic Bullet, which is quite exciting. I'm not used to blenders that work :)
    Oh, and the plates were like 30 cents from Goodwill so thanks for the compliment! Most of my dishes have come from there!

    The chicken salad looks pretty awesome. I would have totally left out the tomatoes & peppers as well (I can only handle them in certain situations).
